How To Make Gingerbread Forky Cookies

Gingerbread cookies practically shout Christmas. Why not combine Christmas with one of Pixar’s most popular characters, Forky? I’m pretty sure Woody and the other toys would approve aren’t you? 

Here is my go-to gingerbread cookie recipe with a twist. You can make these cookies two ways; completely homemade or partially homemade. 

Homemade

What You’ll Need

  • Candy google eyes 
  • Blue frosting or gel in a tube
  • Red frosting or gel in a tube
  • Circle cookie cutter ( the rim of a drinking glass works nicely too)
  • 2 mixing bowls, one medium and one large
  • Cookie sheet
  • Spatula or large spoon
  • Rolling pin
  • Butter knife
  • 3 cups all-purpose flour (extra 1 cup to use when rolling out cookies)
  • 1 1⁄2 teaspoons baking powder
  • 3⁄4 teaspoon baking soda
  • 1⁄4 teaspoon salt
  • 1tablespoon ground ginger
  • 1 3⁄4 teaspoons ground cinnamon
  • 1⁄4 teaspoon ground cloves
  • 6 tablespoons unsalted butter
  • 3⁄4 cup dark brown sugar
  • 1 large egg or ¼ cup applesauce
  • 1⁄2 cup molasses
  • 2 teaspoons vanilla

Directions to Prepare the Cookies

  •  Grab your medium bowl and whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.
  • In a separate larger bowl, beat or briskly mix your butter, brown sugar, and egg on medium speed until well blended.
  • Add molasses and vanilla and continue to mix until well blended.
  • Gently stir in dry ingredients, a little at a time, until blended and smooth.
  • Divide dough in half and wrap each half in plastic or a large ziploc bag. Let the dough stand at room temperature for at least 2 hours. Move to the refrigerator if you plan to bake the next day. Remove the dough and let it stand until room temperature before baking. 
  • Preheat your oven to 375°.
  • Grease or line the cookie sheet with parchment paper.
  • On a clean flat surface gently sprinkle some flour. Use one section of dough and gently roll with your rolling pin until about ¼ inch thick.  
  • Sprinkle flour on the dough and rolling pin as needed to keep dough from sticking. 
  • Use your circle cookie cutter to cut several cookies and place them 1 inch apart on the cookie sheet.  
  • Place the cookies in the oven and bake for 7-10 minutes.  The more time the cookies bake the crunchier they will become.  If you like chewy gingerbread, check the cookies at the 7 minute mark and remove or keep cooking as needed.  
  • Allow the cookies to cool for a few minutes on the pan and then move them to a wire rack. If the cookies come apart, give them more time to cool on the pan before moving.  
  • Repeat the same process with the second section of dough.

Directions to Make the Glaze

  • What You Will Need 
  • 1 cup sifted confectioner’s sugar
  • 1 tablespoons unsalted butter melted
  • 1/2 teaspoon vanilla extract
  • 1 ½  tablespoons of warm water
  • Rubber spatula or pastry brush
  • How to
  • Gently mix above ingredients in a small bowl
  • Wait for the cookies to cool.
  • Lightly brush on a small amount of glaze mixture to each cookie. 
  • Add two google eyes. 
  • Let the glaze dry and harden for 20 minutes. 

Directions to Decorate the Cookies

  • Use your red icing to make a thin squiggly line toward the top of the cookie for hair. 
  • Use your blue icing to make a small oval for a mouth. 
  • Allow the icing to dry and harden. 

Semi-Homemade

What You Will Need

  • Pre-packaged gingerbread cookie mix (dry or refrigerated)
  • Candy google eyes
  • Blue frosting or gel in a tube
  • Red frosting or gel in a tube
  • Circle cookie cutter ( the rim of a drinking glass works nicely too)
  • 2 mixing bowls, one medium and one large
  • Cookie sheet
  • Spatula or large spoon
  • Rolling pin
  • 1 cup all purpose flour
  • Cookie sheet

Directions to prepare the dough

  • Read the instructions on the package completely. 
  • Preheat your oven as directed on the package.
  • Prepare the dough as indicated on the package.
  • Grease or line the cookie sheet with parchment paper.
  • On a clean flat surface gently sprinkle some flour. Use one section of dough and gently roll with your rolling pin until about ¼ inch thick.  
  • Sprinkle flour on the dough and rolling pin as needed to keep dough from sticking. 
  • Use your circle cookie cutter to cut several cookies and place them 1 inch apart on the cookie sheet.  
  • Place the cookies in the oven and bake as directed.
