How To Make Gingerbread Chewbacca Cookies
Christmas cookies are a staple for any Christmas season. Why not mix-it-up and make a twist on the class gingerbread man this year? I think Chewbacca would approve. Don’t you?
Here is my go-to gingerbread cookie recipe. You can make these cookies two ways; completely homemade or partially homemade. Now, let’s get baking!
Homemade
What You’ll Need
- Candy google eyes (or you can use white chocolate chips below)
- Mini white chocolate chips
- Black frosting or gel in a tube
- Gingerbread man cookie cutter
- 2 mixing bowls, one medium and one large
- Cookie sheet
- Spatula or large spoon
- Rolling pin
- Butter knife
- 3 cups all-purpose flour (extra 1 cup to use when rolling out cookies)
- 1 1⁄2 teaspoons baking powder
- 3⁄4 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1tablespoon ground ginger
- 1 3⁄4 teaspoons ground cinnamon
- 1⁄4 teaspoon ground cloves
- 6 tablespoons unsalted butter
- 3⁄4 cup dark brown sugar
- 1 large egg or ¼ cup applesauce
- 1⁄2 cup molasses
- 2 teaspoons vanilla
Directions to Prepare the Cookies
- Grab your medium bowl and whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.
- In a separate larger bowl, beat or briskly mix your butter, brown sugar, and egg on medium speed until well blended.
- Add molasses and vanilla and continue to mix until well blended.
- Next, gently stir in dry ingredients, a little at a time, until blended and smooth.
- Divide dough in half and wrap each half in plastic or a large ziploc bag. Let the dough stand at room temperature for at least 2 hours. Move to the refrigerator if you plan to bake the next day. Remove the dough and let it stand until room temperature before baking.
- While you work, preheat your oven to 375°.
- Grease or line the cookie sheet with parchment paper.
- On a clean flat surface gently sprinkle some flour. Use one section of dough and gently roll with your rolling pin until about ¼ inch thick.
- Sprinkle flour on the dough and rolling pin as needed to keep dough from sticking.
- Use your Gingerbread man cookie cutter to cut several cookies and place them 1 inch apart on the cookie sheet.
- Optional: gently stretch the gingerbread man legs down just a little to elongate the body and make it a bit more like Chewbacca’s tall frame.
- Up next, gently press the sharp edge of a butter knife ⅓ down into the dough creating small vertical marks all over. These will help give the appearance of fur.
- Place the cookies in the oven and bake for 7-10 minutes. The more time the cookies bake the crunchier they will become. If you like chewy gingerbread, check the cookies at the 7 minute mark and remove or keep cooking as needed.
- Finally, allow the cookies to cool for a few minutes on the pan and then move them to a wire rack. If the cookies come apart, give them more time to cool on the pan before moving.
- Repeat the same process with the second section of dough.
Directions to Decorate the Cookies
- Use your black frosting or gel and make two small spots for eyes. Add one google eye or mini white chocolate chip to each small spot. Allow to dry and harden.
- Next, use the black frosting or gel to create a sash or line from one to shoulder down to the opposite hip. Attach mini white chocolate chips across the line.
- Finally, add a small dot or line of black frosting or gel for a nose.
- Optional: add a mouth using frosting if desired.
Partially Homemade
What You’ll Need
- Pre-packaged gingerbread cookie mix (dry or refrigerated)
- Candy google eyes (or you can use white chocolate chips below)
- Mini white chocolate chips
- Black frosting or gel in a tube
- Gingerbread man cookie cutter\
- Rolling pin
- Butter knife
- 1 cup all purpose flour
- Cookie sheet
Directions to prepare the dough
- Read the instructions on the package completely.
- Preheat your oven as directed on the package.
- Next, prepare the dough as indicated on the package.
- See the instructions above in the homemade section. The only difference you may encounter is cook time. Follow the cooking directions on your dough packaging. Once you have cooked your cookies move on to decorating.
