Christmas Mickey Shortbread Sprinkle Cookies
Bake a classic Christmas cookie and make it Disney! It really is as easy as 1-2-3. Great for the whole family to make together. Even the smallest hands can help. These cookies are festive, delicious and adorable. Perfect for any holiday gathering or cookie party!
There are two ways to make these melt in your mouth Mickey cookies; homemade or partially homemade. The main difference is in the dough. If you want to make the cookies from scratch see the directions for homemade below. If you want to use a pre-packaged dough, either dry or refrigerated, see the directions for partially homemade below. You can’t go wrong either way!
Homemade
- What you Will Need
- Mixing Bowl
- Christmas sprinkles of your choice
- Baking sheet
- Non-stick cooking spray or parchment paper
- Mickey or other disney cookie cutter
- Mixing bowl
- Stand or hand mixer
- Wire cooling rack
- 2/3 cup of light brown sugar
- 1 cup of softened butter
- 2 cups of flour
- 1 teaspoon vanilla
- Directions
- In your mixing bowl combine butter and sugar. Mix until fluffy. Using a stand or hand mixer works best.
- Add vanilla and continue mixing.
- Mix in the flour, adding one cup at a time until all ingredients are combined. The consistency should be similar to play-doh.
- Cover the bowl with a clean dry kitchen towel.
- Place the dough in the refrigerator for about an hour.
- Remove dough from the refrigerator.
- Preheat the oven to 350 degrees
- Prepare a cookie sheet with a very-very light coating of cooking spray or use parchment paper.
- Prepare a clean flat surface with a light sprinkle of flour.
- Sprinkle your rolling pin with flour and gently rub to distribute.
- Pour a small amount of dough onto the floured surface.
- Roll into a ½ inch thick section.
- Use your Mickey or other Disney cookie cutter to cut the dough
- Top each shape with sprinkles. Be as generous as you like it’s Christmas after all!
- Place each cookie on the cookie sheet 1 -2 inches apart (the larger the cookie the more space you will need in between).
- Bake for 13-20 minutes depending on the size of the cookies. Larger cookies will need more time.
- Cool on a wire rack.
- Repeat until all dough has been rolled, cut, sprinkled and baked.
- Enjoy those cookies!
Partially Homemade
- What you Will Need
- Mixing Bowl
- Christmas sprinkles of your choice
- Baking sheet
- Non-stick cooking spray or parchment paper
- Mickey or other Disney cookie cutter
- Mixing bowl
- Stand or hand mixer
- Wire cooling rack
- 2/3 cup of light brown sugar

- 2 cups of flour
- 1 teaspoon vanilla
- Directions
- Purchase a dry or refrigerated shortbread cookie mix.
- Read preparation and baking instructions on pre-packaged dough.
- Prepare the dough as indicated on the packaging.
- Preheat the oven as indicated on packaging.
- Prepare a cookie sheet with a very-very light coating of cooking spray or use parchment paper.
- Prepare a clean flat surface with a light sprinkle of flour.
- Sprinkle your rolling pin with flour and gently rub to distribute.
- Pour a small amount of dough onto the floured surface.
- Roll into a ½ inch thick section.
- Use your Mickey or other Disney cookie cutter to cut the dough
- Top each shape with sprinkles. Be as generous as you like-it’s Christmas after all!
